📌 For the Dhokla Base:

Gram Flour (Besan) – ½ cup

Mustard Seeds – ½ tsp
Asafoetida (Hing) – ½ tsp

Step-by-Step Method to Make Palak Dhokla

Step 1: Prepare the Dhokla Mixtures

✅ In a bowl, whisk together gram flour and curd until smooth. Add green chilies if you like it spicy.
✅ Wash and blend spinach into a fine paste.
✅ In a large mixing bowl, combine curd, spinach puree, semolina, green chilies, ginger, salt, and oil. Mix well.
✅ If the curd is fresh, add 1-2 tsp lemon juice. Cover and let it rest for 15 minutes for the semolina to expand.
✅ In another bowl, prepare the gram flour mixture with curd, green chilies, ginger, and asafoetida. Let it rest for 15 minutes.

Step 2: Steaming the Dhokla

✅ Heat water in a steamer and grease a square vessel with oil.
✅ Add Eno to the spinach mixture, mix quickly, and pour into the greased vessel. Spread evenly.
✅ Add Eno to the gram flour mixture, mix, and gently layer it over the spinach mixture.
✅ Place the vessel in the steamer, cover, and steam for 20 minutes.

Step 3: Check & Temper the Dhokla

✅ Insert a knife or toothpick to check doneness. If it comes out clean, the Dhokla is ready. If sticky, steam for 2-5 more minutes.
✅ For tempering, heat oil in a pan, add mustard seeds and let them crackle. Pour over the steamed dhokla for enhanced flavor.
