Aloo Dahi Vada

🥔 Ingredients for Aloo Dahi Vada (Vrat Special)

  • 2 boiled potatoes (peeled and mashed)

  • 1 cup curd (whisked smooth)

  • 3-4 tsp kuttu ka atta (buckwheat flour) or singhare ka atta (water chestnut flour)

  • 1/4 tsp black pepper powder

  • 1 tsp roasted cumin powder

  • 1 black cardamom (crushed)

  • 1 tsp rock salt (sendha namak)

  • 1 tsp finely chopped coriander leaves

  • Oil for frying (preferably ghee or vrat-friendly oil)

👨‍🍳 How to Make Aloo Dahi Vada for Navratri:

  1. Prepare the Dough:
In a mixing bowl, mash the boiled potatoes. Add black pepper, roasted cumin powder, crushed black cardamom, rock salt, and chopped coriander leaves. Mix well.

  2. Add Flour:
Now add the kuttu atta or singhare ka atta to the mixture. Knead gently to form a smooth dough-like consistency.

  3. Shape the Vadas:
Divide the dough into small equal parts. Roll and flatten them into vada shapes using wet hands.

  4. Deep Fry:
Heat oil in a kadhai. Carefully drop the vadas and fry them on medium heat until golden brown and crispy. Remove and place on tissue to absorb excess oil.

  5. Soak in Curd:
Whisk the curd until smooth. Add a pinch of rock salt and cumin powder. Soak the fried vadas in the curd for 5–10 minutes so they absorb the flavor.

  6. Garnish and Serve:
Place soaked vadas on a serving plate. Drizzle some extra curd, sprinkle more cumin powder, chopped coriander, and if desired, vrat-friendly sweet chutney or pomegranate seeds for extra flavor.
