Ingredients for Gud Malpua:

  • 1 cup wheat flour
  • 1 cup rice flour
  • 250 grams jaggery (gud)
  • 2 ripe bananas
  • 2 tablespoons coconut powder
  • 2 tablespoons raisins
  • 5-6 almonds (finely chopped)
  • 5-6 cashews (finely chopped)
  • 1 tablespoon pistachios (finely chopped)
  • 1 teaspoon fennel seeds (saunf)
  • 1 teaspoon cardamom powder (elaichi)
  • 2 tablespoons Milkmaid (sweetened condensed milk)
  • ½ cup milk (as needed)
  • Ghee or refined oil for frying

Step-by-Step Method to Prepare Gud Malpua:

Step 1: Prepare Jaggery Syrup

  • Begin by breaking the jaggery into smaller pieces.
  • Soak these pieces in half a glass of warm water until completely dissolved.
  • Stir well and strain the syrup through a fine sieve to remove impurities. Keep aside.

Step 2: Mash Bananas and Mix Dry Ingredients

  • Peel the ripe bananas, place them in a large mixing bowl, and mash thoroughly until smooth.
  • Add wheat flour and rice flour to the mashed bananas and mix gently.

Step 3: Prepare Malpua Batter

  • Slowly pour the jaggery syrup into the flour and banana mixture, stirring continuously.
  • Add coconut powder and gradually mix in milk, as required, to form a smooth, thick batter (similar to pancake batter consistency).

Step 4: Add Nuts, Spices, and Condensed Milk

  • To the batter, add Milkmaid (condensed milk), fennel seeds, cardamom powder, chopped almonds, cashews, pistachios, and raisins.
  • Stir well, ensuring all ingredients are evenly distributed.
  • Cover and rest the batter for 10-15 minutes, allowing flavours to blend beautifully.

Step 5: Fry the Malpuas

  • Heat ghee or refined oil in a heavy-bottomed frying pan over medium heat.
  • Using a spoon or piping bag, carefully pour small, round portions of batter into the hot oil.
  • Fry the malpuas on medium heat until golden brown and crispy on both sides, gently flipping them occasionally.

Step 6: Drain and Serve

  • Once perfectly fried, remove the malpuas from the pan and place them on absorbent tissue paper to drain excess oil.
  • Serve the Gur ke Malpua warm, garnished with additional chopped nuts or drizzled with a dash of condensed milk.

Tips for Perfect Gud Malpua:

  • Ensure the batter consistency is thick yet pourable, preventing malpuas from absorbing too much oil.
  • Fry malpuas at medium heat to achieve the perfect crispy edges and tender interiors.
  • You may garnish the final dish with saffron strands or additional pistachios for extra flavour and visual appeal.
